Does itogai work with Outlook or Microsoft 365?

Yes. Connect a Microsoft 365 account in Settings, Connected accounts, Add Outlook account, through Microsoft’s own sign-in. itogai reads Outlook mail metadata only (who you write to, when, and how often) and never the body of your emails. One Microsoft account can be connected at a time. A calendar is its own connection, and calendar connections are in development.
